The subject of the public contract is to ensure the complete operational chain of hospital catering at the Trauma Hospital in Brno, including preparation, transport, delivery and distribution of meals for both patients and employees, as well as ensuring related activities and logistics services. The service must be provided continuously throughout the duration of the contractual relationship, i.e. every calendar day of the year, including Saturdays, Sundays, public holidays and other non-working days. The subject of the service also includes providing an online ordering system, personal and material provision to meet legislative requirements for safety and hygiene. The supplier is responsible for all processes related to the provision of catering services, including personal, technical and organisational security. The public contract will be carried out in accordance with generally binding legal regulations, valid standards and regulations relating to occupational safety and technical equipment. In the event that during the execution of the public contract, a new version of any of the affected regulations comes into force, or another legal regulation relating to the subject of the public contract comes into force, the supplier is obliged to comply with these new legal regulations and instructions (procedures) when implementing the public contract. In particular, compliance with these legal regulations is required: • Regulation (EC) No 852/2004 of the European Parliament and of the Council on the hygiene of foodstuffs, • Act No. 258/2000 Coll., on the protection of public health, • Act No. 110/1997 Coll., on foodstuffs and tobacco products, • Decree No. 137/2004 Coll., on hygiene requirements for catering services and on the principles of personal and operational hygiene in activities of epidemiological significance. The supplier is obliged to prove the implemented HACCP system (Hazard Analysis and Critical Control Points – Analysis of hazards and critical control points), which serves to identify, evaluate and control hazards affecting the health safety of food in the entire process from preparation to delivery. The public contract also includes the rental of non-residential premises necessary for the preparation and distribution of meals. The specifications of the premises and the conditions of the lease are stated in the draft Lease Agreement for non-residential premises and its annexes (Annex 1 Site Plan of Premises (in ZD as a separate annex) and Annex 2 Areas of Distribution Centre Rooms (in ZD as Annex 9). The contracting authority provides the standard consumables (glasses, jugs, cutlery and other materials not listed in the lease agreement for immovable property) in the amount corresponding to the expected number of diners. Details of the delivery and distribution of meals for the employees and patients of the contracting authority are specified in the draft Agreement on the Provision of Catering Services and other documents of the tender documentation.
