France – Restaurant and food-serving services – Gestion et exploitation du restaurant L'Ichali du Mémorial ACTe et services de traiteur

The contract concerns the management and operation of the restaurant at the Mémorial ACTe, named L'Ichali, as well as the provision of event catering services for events organised by or within the establishment. The contractor acts as a culinary operator and not as a commercial operator: it provides culinary services (chef and brigade, procurement, preparation, service, cleaning and maintenance of premises and equipment). Restaurant revenues are collected on behalf of the Mémorial ACTe revenue office, by agents designated by decree of the director general from among the contractor's staff. The contractor is paid by a monthly lump sum with a minor variable remuneration component, by a schedule of unit prices for catering services, and by a schedule of unit prices for additional catering services. Occupation of public domain is subject to the payment of a fee. The contract is awarded for a period of 12 months, renewable once (maximum 24 months), for a maximum amount of 1 200 000 EUR excl. VAT.
