The City of Lignan-sur-Orb is seeking a service provider capable of supplying cold-prepared meals that meet the most recent nutritional and dietary standards for students attending the city's schools and extracurricular establishments. The meals must be adapted to the specific needs of school-aged children, in line with the recommendations of the National Nutrition and Health Programme (PNNS) and the directives issued by the competent health authorities. The required service includes the supply, preparation, and delivery of balanced, varied, and tasty meals, while strictly adhering to hygiene and food safety rules. The meals must include portions suitable for the different age groups of the diners. Furthermore, the service provider must guarantee complete traceability of the products used, as well as rigorous management of the cold chain throughout the delivery process. The contract holder will be responsible for various essential tasks, including:

- Designing menus that must be balanced and adapted to the specific needs of the school context.

- Procuring high-quality foodstuffs, ensuring the freshness of the ingredients used.

- Preparing, cooking, and packaging cooked dishes, cold preparations, and any other product necessary to meet the requirements of this contract.

- Managing the transport of meals to the designated site in accordance with the provisions set out in Article 3.4.3 of the Particular Technical Clauses Document (CCTP).

- Strictly adhering to the hygiene standards in force at all stages of the service provision process, including the implementation of internal controls and an HACCP system.

- Regularly carrying out, at its own expense, microbiological checks, the results of which must be made available to the municipality to ensure food safety.
